Coffee Cup Scramble


Being the queen of bacon land as I have dubbed myself because of my set weekend routine of consuming bacon every weekend from here till the end. I have slowly started to add other breakfast items to my mornings. However eggs never really did it for me unless we were at ihop and I order over easy eggs and toast. But after going through a dozen eggs at home in attempts to make my own me and Gregory having to eat 12 eggs worth of scrambled eggs (bless him) decided it was something better left for adventures to ihop for them. 

Luckily a couple weekends ago Gregory tried something new (He's the cooking wizard in the house, I'm the baking queen (as well as bacon queen)) and mixed in some shredded cheese....okay A LOT of shredded cheese into some scrambled eggs. Well let me tell you they were DELICIOUS! I devoured the whole plate! 

So when I received the latest catalog from Better Homes & Garden I saw this recipe and thought: "WHAT I DON'T HAVE TO WAIT TILL THE WEEKEND FOR CHEESEY SCAMBLED GOODNESS?!" Unfortunately I haven't been able to make them yet as my time before work is spent in a tired haze until I consume coffee and by then I'm running out the door. But maybe Friday night I'll try it when this week slows down. Haha! But until them I hoped you lovlies could give it a go! Enjoy!

Ingredients

  • 2 Eggs
  • 2 tablespoons milk
  • 2 tablespoons shredded Cheddar cheese
  • salt and pepper


Directions
  1. COAT 12-oz. microwave-safe coffee mug with cooking spray. ADD eggs and milk; beat until blended.
  2. MICROWAVE on HIGH 45 seconds; stir. MICROWAVE until eggs are almost set, 30 to 45 seconds longer.
  3. TOP with cheese; season with salt and pepper.
Tip: Microwave ovens vary. Cooking times may need to be adjusted.
